BEGINNING

In 1977, Tallent Sausage started as a small-town grocery store and meat market, originally named Riverside Supermart. Founded by Tommy Tallent, his wife Arleen, and their sons John and Ron, it was a humble spot—just a few shelves of groceries, a meat case, and a gas pump. But they had a bigger vision.

A Family Tradition, Built 
on Flavor

From the very beginning, the family knew they wanted more than just a grocery store—they wanted to create something worth the drive. They focused on developing a full-service meat case, but they saw the opportunity to make something truly special.

So, they got to work. Experimenting. Tweaking. Perfecting.

Different cuts, spice blends, casings, and smoking methods—until they had it: a one-of-a-kind, real wood-smoked sausage that put them on the map of East Texas.

By 1985, their sausage had become the star of the store, and they knew it was time for a change. The family business rebranded as Tallent Sausage, a name that carried their legacy forward.

Today, we remain one of the few sausage makers still using Real Hardwood Smoke, never liquid smoke or artificial flavors. Every link is handcrafted, just like it’s always been—made with real cuts of meat, no fillers, no shortcuts.

What started with one family and a passion for great sausage is now a four-generation tradition. And while our store has grown to include a full-service meat case, BBQ deli, and grocery essentials, the heart of our business remains the same—handcrafted, wood-smoked sausage made the right way.

Legends aren’t built by shortcuts. We know it takes time to craft sausage the right way—slowly smoked over Texas hardwood.
