Different cuts, spice blends, casings, and smoking methods—until they had it: a one-of-a-kind, real wood-smoked sausage that put them on the map of East Texas.
By 1985, their sausage had become the star of the store, and they knew it was time for a change. The family business rebranded as Tallent Sausage, a name that carried their legacy forward.
